PHILOSOPHY

Perla aims to bring the magnificent regions of Southern Italy to Hong Kong, with an exquisite culinary journey, brought to you by the specialist philosophies of our team led by Chef Fabiano Palombini, who believes that the characteristics of the main ingredient should never be altered, but rather enhanced by innovative culinary techniques and, therefore, preserved in their originality. Dining amongst the clouds is only made better with the freshest seafood available, with every part being utilised so as to follow our ode to sustainability

MEET  THE  CHEF

Head Chef Fabiano Palombini, hailing from Abruzzo in Southern Italy, has over 35 years of experience under his culinary belt, spending years working in Michelin-starred restaurants across Europe and North America, including three-starred La Pergola in Rome, three-starred Hof Van Cleve in Belgium, three-starred Eleven Madison Park in New York and many more, before settling in Hong Kong to further advance his culinary career.

 

In 2019, he aided in establishing the authentic Piedmontese restaurant, Castellana, and now finds himself as head chef at Perla, bringing a priceless amount of culinary knowledge to ensure that our guests are being served the very best of Southern Italian gastronomy
